Those long pink and red stalks go jammy and sweet-sour once they meet a bit of heat, and they make the kitchen smell amazing.\u003c\/p\u003e\n\u003cp\u003eSpring in the Northern Rivers is crumble season, and rhubarb is where it starts.\u003c\/p\u003e\n\u003cp\u003eIt's technically a vegetable, but you'll almost always cook it like a fruit. It loves sugar, citrus, ginger and creamy things.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eBefore you start\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eOnly eat the stalks. The leaves aren't safe to eat, so cut them off and compost them. Trim both ends, give the stalks a rinse and cut them into 3 to 4cm pieces.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eA few ways I use it\u003c\/strong\u003e\u003c\/p\u003e\n\u003cul\u003e\n\u003cli\u003eRoasted with orange zest and a drizzle of honey at 180°C for about 15 minutes, until soft but still holding its shape. Lovely over yoghurt or porridge.\u003c\/li\u003e\n\u003cli\u003eStirred through apple for a spring crumble\u003c\/li\u003e\n\u003cli\u003eStewed with a little ginger and kept in the fridge for breakfasts during the week\u003c\/li\u003e\n\u003cli\u003ePaired with strawberries, which are a classic match\u003c\/li\u003e\n\u003c\/ul\u003e\n\u003cp\u003e\u003cstrong\u003eHow to store\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eWrap the stalks in a damp tea towel and keep them in the crisper.
