Chargrilled Corn & Tomato Salsa with Lime & Coriander

As the weather warms and the BBQs come out, summer cooking becomes less about recipes and more about rhythm — quick, fresh meals that burst with colour and taste like sunshine.

This Chargrilled Corn & Tomato Salsa is exactly that: simple, bright, and endlessly versatile. Serve it with grilled fish or steak, pile it onto tacos, or scoop it up with corn chips on a hot afternoon.

It’s made from the season’s most flavourful produce — sweet corn, sun-ripened cherry tomatoes, and fragrant coriander — ingredients that need almost nothing done to them to shine.

When produce is fresh and local, simplicity is the secret.


Ingredients

  • 2 ears of corn, husked

  • 1 punnet cherry tomatoes, halved

  • 1 small red onion, finely diced

  • Juice of 1 lime

  • 2 tbsp chopped fresh coriander

  • 1 tbsp olive oil

  • ½ red chilli, finely chopped (optional)

  • Sea salt & pepper to taste


Method

  1. Lightly brush the corn with olive oil and grill on a BBQ or grill pan until lightly charred, turning occasionally.

  2. Slice the kernels off the cob and place them in a bowl.

  3. Add tomatoes, onion, coriander, lime juice, chilli (if using), and olive oil.

  4. Toss to combine and season with salt and pepper.

  5. Serve fresh or chilled — it’s even better the next day when the flavours meld.
