It’s made from the season’s most flavourful produce — sweet corn, sun-ripened cherry tomatoes, and fragrant coriander — ingredients that need almost nothing done to them to shine.

Ingredients

2 ears of corn, husked

1 punnet cherry tomatoes, halved

1 small red onion, finely diced

Juice of 1 lime

2 tbsp chopped fresh coriander

1 tbsp olive oil

½ red chilli, finely chopped (optional)

Sea salt & pepper to taste
Method

Lightly brush the corn with olive oil and grill on a BBQ or grill pan until lightly charred, turning occasionally.

Slice the kernels off the cob and place them in a bowl.

Add tomatoes, onion, coriander, lime juice, chilli (if using), and olive oil.

Toss to combine and season with salt and pepper.

Serve fresh or chilled — it’s even better the next day when the flavours meld.
