Sweet Potato & Carrot Fritters

Recipe:

  • 2 medium sweet potatoes, peeled and grated

  • 2 large carrots, peeled and grated

  • 2 eggs

  • 1/2 cup flour (or chickpea flour for gluten-free)

  • 1/2 teaspoon cumin

  • Salt and pepper to taste

  • Olive oil for frying

Instructions:

  1. Grate the sweet potatoes and carrots, and squeeze out any excess moisture.

  2. In a bowl, mix the grated vegetables with the eggs, flour, cumin, salt, and pepper until combined.

  3. Heat a little olive oil in a pan over medium heat. Form the vegetable mixture into small patties and fry for 3-4 minutes on each side, until golden and crispy.

  4. Serve with a dollop of yogurt or your favorite dipping sauce.
