
Sweet Potato & Carrot Fritters

2 medium sweet potatoes, peeled and grated

2 large carrots, peeled and grated

2 eggs

1/2 cup flour (or chickpea flour for gluten-free)

1/2 teaspoon cumin

Salt and pepper to taste

Olive oil for frying
Instructions:

Grate the sweet potatoes and carrots, and squeeze out any excess moisture.

In a bowl, mix the grated vegetables with the eggs, flour, cumin, salt, and pepper until combined.

Heat a little olive oil in a pan over medium heat. Form the vegetable mixture into small patties and fry for 3-4 minutes on each side, until golden and crispy.

Serve with a dollop of yogurt or your favorite dipping sauce.
