Pear & Rocket Salad with Walnuts

Recipe:

  • 2 pears, cored and sliced

  • 4 cups rocket (arugula)

  • 1/4 cup walnuts, toasted

  • 1/4 cup crumbled blue cheese (optional)

  • 1 tablespoon olive oil

  • 1 tablespoon lemon juice

  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the sliced pears, rocket, and toasted walnuts.

  2. Drizzle with olive oil and lemon juice, then toss gently to combine.

  3. Top with crumbled blue cheese, if using, and season with salt and pepper.

  4. Serve immediately as a fresh, crisp side salad.
