Ducasse bananas are shorter and plumper than a Lady Finger, with a creamy, custard-like texture and a subtly tangy finish that distinguishes them from anything you will find in a supermarket. Grown at Conscious Ground in the Byron Bay hinterland using certified organic, regenerative farming practices.

These are a banana for people who think they already know what a banana tastes like.

How to use:

  • Eat fresh when fully yellow, the creaminess is at its peak.
  • Mash onto toast with tahini and a pinch of sea salt.
  • Slice and pan-fry in coconut oil with a pinch of cinnamon.
  • Blend into smoothies or lassis with yoghurt and cardamom.
  • Use overripe fruit in baked goods such as cakes, muffins and pancakes.

How to store:
Store at room temperature. Do not refrigerate. Ducasse bananas ripen quickly once yellow. If you will not use them within a day or two, peel, slice and freeze for smoothies or baking later.
