If you haven't cooked with Romanesco before, you're in for a treat. It looks like something from another world - perfect lime-green spirals stacked into a natural fractal - but it tastes like the best version of cauliflower you've ever had. Nuttier, sweeter and more delicate in texture, it holds its shape beautifully whether roasted, steamed or eaten raw.
Roast whole with olive oil, salt and a squeeze of lemon until the tips catch and caramelise. Break into florets and toss through pasta with anchovy, chilli and breadcrumbs. Slice thin on a mandoline and eat raw in a salad with shaved parmesan and a mustardy dressing. Or simply steam and serve alongside whatever's coming off the stove - it pairs with almost everything.
Store unwashed in the fridge, loosely wrapped, for up to a week. Best used sooner rather than later to keep those spirals looking their finest.
