Green chillies suit the fresh, bright food we start cooking as Northern Rivers spring warms up.

Perfect for adding some gentle heat to curries, salsas and stir fries.

How to prepare

Slice off the stem and halve lengthways. Scrape out the seeds if you want them milder.

Spring recipe: Green chilli and coriander sauce

Blend green chillies with a bunch of coriander, garlic, lime juice, olive oil and salt. Spoon over grilled fish, tacos or roast vegetables.

How to store

Keep them in a paper bag in the fridge for up to two weeks. They also freeze well.
