Skipjack tuna caught one at a time by pole and line in the Azores, by small island fisheries. That method keeps bycatch to a minimum. The steaks are whole and packed in spring water with no heavy oils. Eat them straight from the tin with lemon and sea salt, or layer them on sourdough with capers and red onion.
