Hogan Farm Smoked Belly Bacon - 240g approx - Certified Free Range
This is not supermarket bacon. It has not been pumped with water, cured with nitrates, or sliced from a pig that never saw daylight. It is slow-grown, free-range pork belly, traditionally cured and smoked by Trevor at Lennox Head Butchery with the most minimal natural processing as possible- and the difference in the pan is immediate. It renders properly, it does not shrink to nothing, and the flavour is something you will notice.
Cook it low in a cold pan and let the fat render slowly. Finish on high heat for the last minute. Eat it simply, because it does not need help.
From David Hogan's farm in New Italy, APIQ Free Range certified and gestation stall free. Small batch, limited stock.
Approx 240g per pack.
Storage
Delivered frozen. Place in the freezer on arrival. Once defrosted, use within 5 days and do not refreeze.
