Also known as cavolo nero or Tuscan kale, this is the dark, deeply nourishing leafy green that comes into its own as temperatures drop. Autumn brings out its best - leaves are tender but hold up beautifully in everything from a slow braise to a quick sauté.
Slow-cook with white beans and a parmesan rind. Shred into a ribollita or minestrone. Massage raw with lemon and good olive oil for a salad that only gets better as it sits. Or strip the leaves, toss with oil and sea salt, and roast until crisp. Pairs with roasted sweet potato, eggs, strong cheese and anything coming off the grill.
Keep refrigerated, unwashed, in a reusable bag or wrapped in a damp tea towel in the crisper. Best within 5–7 days. To extend its life, blanch, cool in ice water and freeze in portions.
