The Maryland is the whole leg - thigh and drumstick together, bone-in, skin-on. It is the most self-sufficient cut on the bird. Enough fat to baste itself, enough structure to hold up to high heat or slow braises, and enough size to anchor a proper meal.
Roast it over vegetables so the fat drips down and does the work for you. Slow-cook it in good stock until the meat pulls cleanly from the bone. Or simply season it well, put it in a hot oven and leave it alone.

Delivered frozen. Place in the freezer on arrival. Once defrosted, use within 3 days and do not refreeze.
