An honest, uncomplicated cut that rewards good sourcing more than almost anything else. The difference between a drumstick from a fast-grown shed bird and one from a slow-grown foraging bird is not subtle -- the texture is firmer, the flavour is deeper, and the fat renders properly rather than pooling.
Roast them high for crispy skin. Braise them low for fall-off-the-bone. Marinate overnight and cook them on a Sunday afternoon with no particular plan. They are forgiving and genuinely delicious from a bird raised this well.
