Wings from a slow-grown foraging bird have more fat, more flavour and more substance than anything you'll find at a supermarket. The skin crisps properly. The meat doesn't dry out. And because these birds have actually used their wings -- moving through food forest and foraging across diverse pasture -- there's real flavour in the muscle.
Roast them hot with nothing but salt and let the fat do the work. Or marinate overnight and cook them low before finishing high. Either way, these are worth eating slowly.
