An egg is one of the most complete foods on the planet. But not all eggs are equal, and the difference starts long before the egg is laid.

These eggs come from the flock at Misty Creek Agroforestry in the Northern Rivers of NSW, where Tom and Nicole raise their birds as part of a living, working agroforestry system. The hens forage across diverse pasture and food forest, eating insects, seeds, fallen fruit and grasses. Their diet is varied, their environment is genuinely enriching, and it shows in the egg.

What should I look for in a good egg?

A deep, almost orange yolk is the sign of a hen eating a diverse, natural diet rich in carotenoids. A pale yellow yolk is the sign of a hen eating mostly grain in a controlled environment. These eggs will have the kind of yolk that makes you stop and notice. That colour is nutrition you can see.

Pastured, organically raised eggs also have a meaningfully different nutritional profile to conventional eggs. Higher in omega-3 fatty acids, higher in fat soluble vitamins, and produced without the routine use of antibiotics or synthetic inputs.

For us at CVO, adding these eggs has filled a gap we've genuinely wanted to close for a while. We already offer local free range eggs, but access to organic eggs from a producer whose farming philosophy we know and trust has been something our community has been asking for. Tom and Nicole are that producer.

Crack one into a pan with good butter on a low heat. Let the white just set and leave the yolk soft. Eat it on sourdough with a pinch of good salt. That is the whole recipe.
