One of the most forgiving and flavourful cuts on the pig. Collar butt comes from the upper shoulder, well-marbled and built for low, slow cooking - pulled pork, braises, slow-roasted with fennel and garlic, or sliced thick after a few hours in the oven.

Free-range, APIQ certified pork from David Hogan's farm in New Italy, butchered by Trevor at Lennox Head Butchery as part of our whole-hog purchase. Three packs available.

Delivered frozen. Place in the freezer on arrival. Once defrosted, use within 3 days and do not refreeze.
