Hogan Farm Pasture-Raised Pork Lard - Rendering Fat
Hogan Farm Pasture-Raised Pork Lard - Rendering Fat
Lard fell out of fashion when seed oils became cheap. It is coming back for good reason.
Fat from a pasture-raised pig that has roamed, rooted and eaten well is nutritionally and culinarily different to industrially produced lard. It renders into a clean, stable cooking fat with a high smoke point, a mild flavour and a richness that makes roasted vegetables, pastry and sauteed greens genuinely better.
Render it low and slow on the stovetop, strain through a fine sieve, and store in a jar in the fridge. It will keep for months and replace most of the oils in your kitchen.
From David Hogan's farm in New Italy, APIQ Free Range certified and gestation stall free. Butchered by Trevor at Lennox Head Butchery as part of our whole-hog purchase. Limited stock.
