Snowpeas 250g - Local, Spray Free

Grown by Peta at Pigface Farm in Mororo, these snow peas are spray free and picked at their sweetest spring window. Supply is limited this season, once they're gone, they're gone until next spring.

Snow peas are one of the true markers of spring in the valley: quick to cook, quicker to eat straight from the bag standing at the bench.

In the kitchen

Snow peas want heat and speed. A few ideas for this week's box:

• Tossed through a hot wok with garlic and ginger for 60 seconds, no longer
• Blanched for 30 seconds and shocked in ice water, then into a spring salad with mint and lemon
• Sliced raw on an angle through noodle salads for crunch
• Stir-fried with spring onion and a splash of sesame oil as a simple side

How to store

Keep them unwashed in a paper bag or breathable container in the crisper drawer. They'll hold well for up to a week, though the flavour and snap are best in the first few days. Wash just before using, not before storing, extra moisture speeds up spoilage.
